The heart of BRUNELLO CORDELLA is the brand-new underground cellar.

In this sustainable, functional, and architecturally designed building of 2500 square meters, the perfect embrace between the rich fruit of the vineyards and the highest winemaking technology takes place, resulting in one of nature’s finest products.

Organic grapes are rigorously selected with the help of new machinery.

Once the grapes reach the 100 hl stainless steel tanks, selected natural yeasts from the CORDELLA vineyards are added.

The organic wines, both the Brunello di Montalcino DOCG Bio and the Rosso di Montalcino DOC Bio, are aged in our 25 hl Slavonian oak barrels and Allier wood barrels. The latter are delicately toasted for about an hour under a gentle flame to impart their typical smoothness.

The wines mature in our temperature-controlled cellar for a minimum of 8 months for Brunello di Montalcino DOCG and a minimum of 4 months for Rosso di Montalcino DOC.

The entire cellar was built with environmental sustainability in mind, incorporating water and energy-saving measures, and has obtained ISO 14000 environmental certification from TUV Austria.
